Time’s Almost Up
With just one Monday left in January, it’s time for a check-in! How have you done this month? I’ve had a great time eating meatless once a week, and it turns out that I already eat a lot of meals that are meatless or can be easily modified to be meatless. What can I say, I love salad.

But I had no idea how easy it was for me to make my “regular” meals meatless! I’ve also gotten really into cooking Indian dishes which my husband is super excited about. Even when I was in a pinch for time or forgot to plan a meatless meal, having a few options in the pantry like these Bombay Potatoes and some rice made meatless substitution a cinch.

Effects of Meatless Mondays
I have to say that I haven’t noticed any change in my energy or strength (I lift weights 3x a week) by occasionally eliminating meat, but I do spend a lot less at the grocery store!
In general, I feel like I’m a lot more aware of what I’m eating, especially when it comes to quantities and types of meats. I’m trying to move away from beef and consume more chicken and (sustainably-caught) fish on days when I do eat animal products.
What’s Next?
After just one short month of choosing to remove meat from three meals for one day a week, I’m planning to extend this mini challenge into February (and probably beyond). I’ll also be starting a new mini challenge next month!
